My Go To Breakfast Muffins

This is one of my favourite meal prep recipes lately! I often make 1-2 batches and freeze them for an on -the-go breakfast or snack! The recipe is very customizable to your nutrition needs and tastes. Often I switch up the vegetables (I always have used shredded zucchini), but I have added in peas, corn, and diced carrots. If you want a diary free option swap the milk, cheese and mayo for vegan-diary free alternatives, it works well. The large flake nutritional yeast adds a "cheesy" flavour and boosts nutrition. It gives our body several B-vitamins such as vitamin B12, Thiamine (Vit B1), Riboflavin (Vit B2), Niacin (Vit B3), Vitamin B6, and folate.
